Bayman’s Bounty: The Flavor and History of the Peconic Bay Scallop

If you’ve ever wondered how the marine environment affects the flavor of Peconic Bay’s most beloved bivalve, then you’re in luck. Culinary historian Charity Robey – who first presented her research on the Peconic Bay scallop at the 2017 Oxford Symposium on Food & Cookery – will be our guest speaker, followed by a scallop demonstration and tasting.
